A colour interior costs more to print than black and white. So the app lets you choose, for the whole book or for a single page.
Click Book settings, and look under Printing. Tick Print this book in colour. Pictures that come with a coloured version now print in colour. Turn it off, and they print as line drawings, with everything else in greys. You choose this when you start a book, and you can change it here at any time.
Want just one page to be different? Select it, and use Colour on this page. Follow the book is the normal choice. Pick Colour or Black and white to make this page the exception.
